For those who paid attention: yes, we had coffee from this farm before, very recently.
For those who didn’t pay attention: We had coffee from this farm before, very recently. This one is from the same farm and producer but a different variety: Pink Bourbon.
The Pink Bourbon variety takes its name from the light pink color the cherries take on when they are ripe, and while it is believed to be a natural hybrid of Red Bourbon and Yellow Bourbon, genetic testing has shown it is actually closer to Ethiopian landraces than the Bourbon family.
Anyway, more interesting maybe is what it tastes like. The producer of this coffee is Manuel Lopez, who doesn’t have his own farm yet but buys cherries from (in this case) Finca Belén and processes it himself. Opposed to the more funky Chiroso we had from him before, this coffee is washed and therefore a lot cleaner and more consistent. It’s actually called soft washed but nobody really knows what that entails. They must have processed it with a soft touch. The variety definitely brings some acidity to the table and gives it some sparkle.
All in all a very bright and light juicy coffee with notes of Black tea, Apricot and Red apple.
