Process Explanation: Hybrid Fermentation Washed

 

This coffee underwent a double-stage fermentation. First, cherries at peak ripeness were fermented whole inside harvest bags for 24 hours at ambient temperature, allowing controlled anaerobic activity. The coffee was then dupulped and transferred with its mucilage to an open tank for an additional 24-hour aerobic fermentation. Afterwards, the beans were fully washed and moved to drying.
